Back to School Cupcakes

My daughter and I had so much fun making these cupcakes for my son's first day of Kindergarten. We found the idea in the September issue of Family Fun magazine.

You need to have:

  • Yellow, green and white frosting (just a TINY bit of green and tablespoon or two of white).

  • Cupcakes - we made yellow ones.

  • Red M&M's

  • A small plastic bag (use a freezer bag or you might break it while piping)

  • Chocolate-covered graham crackers

  • White Good & Plenty candies

The first thing you do is frost the cupcakes with the yellow frosting. (Be generous, since you'll be standing up the cookies in the frosting.) Allow them to sit out for about an hour, just to let the frosting set up nicely. Meanwhile, dab each M&M in the green frosting to make them look like little apples, then set them aside. Put the white frosting into the plastic bag, squeeze all the air out and seal. Cut a very small hole on one corner and use that to write on the cookies. After the frosting has set, stand the cookies up on the cupcakes. Then add an M&M "apple" and a Good & Plenty "chalk" and you're ready to welcome your student home!

*Notes: I would have loved to have found white chocolate covered square cookies, instead, since schools use white boards now.
