Cupcakes for dinner?!

April Fool's! We had a fun dinner to celebrate April Fool's Day. It consisted of cupcakes for our entree and grilled cheese sandwiches for dessert. Or is that the other way around?

It's easy to make this tricky meal.

To make the "cupcakes," simply mix up a batch of your favorite meatloaf recipe (you can see mine below) and use an ice cream scoop to scoop it into greased foil baking cups (you want the cup to be almost full, but not quite...the ice cream scoop seemed to be the perfect measurement). Then bake the meatloaves for about 30 minutes at 350 degrees or until they are cooked through. While the meatloaves are cooking, whip up a batch of mashed potatoes and use food coloring to make them any color you like. Then spread some of the colored potatoes onto the top of the meatloaves, just like frosting cupcakes!

To make the "grilled cheese," slice pound cake to be about as thick as slices of
sandwich bread. Then pop them into the toaster to brown them. Let them cool. Meanwhile, use food coloring to dye white frosting to be the same color as american cheese. Once the pound cake slices are cooled, cut them in half diagonally (this causes less crumbs and squishing of the frosting), then spread the frosting on one wedge and put another wedge on top to look like grilled cheese!


MEATLOAF RECIPE

Ingredients:
½ pound gr. Beef
½ pound gr. Pork
1 egg
1 teaspoon Worcestershire sauce
¼ cup ketchup
½ cup beef stock
2 tablespoons onion (grated)
Salt and pepper
2/3 cup oats


Instructions:
Mix ingredients together just until incorporated. Form into a loaf shape on a greased baking sheet. Bake for one hour at 350 degrees.

**Notes: I only colored enough of the mashed potatoes to cover the meatloaves and left the rest plain for picky eaters. Also, I made gravy, but didn't put it on the food until everyone found out it wasn't cupcakes.
