Very Berry Crepes

These are very simple, slightly sweet German-style crepes (aka pancakes).  Then we fill them with berries and whipped cream for a delicious finish.

Ingredients:

For the crepes:
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1 tablespoon sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons butter, melted

For the filling:
3 cups fresh (not frozen!) berries
1/4 cup sugar (more or less depending upon the sweetness of your berries)
2 tablespoons cornstarch
Pinch of salt
Whipped cream (or non-dairy whipped topping)

Directions:

For the berry filling:
Place berries, sugar, cornstarch and salt into saucepan.  Heat pan to moderate heat and mash slightly while letting mixture come to a boil.  Then lower heat and simmer for 3-4 minutes, stirring occasionally.  Transfer to a bowl and let cool while making the crepes.

For the crepes:
In a blender, place all crepe ingredients inside and mix until smooth.  

Heat a lightly greased small frying pan over medium - medium/high heat.  Pour about 1/4 cup of the batter into the center of the pan then swirl the pan in a circular motion so the batter coats the entire surface evenly.  Cook the crepe for a minute or two until the bottom turns light brown.  Loosen with a spatula and carefully flip and brown the other side. 

To serve:
Place one crepe on a plate.  Cover about half the crepe with a thin layer of the berry mixture and then put a dollop of whipped cream on top of that.  Then start from the topped side and roll the crepe around the filling.  Serve and enjoy!
